Suckling pig tacos help give cancer the boot!

Chef Jim Anile was honored to participate in the Raleigh Roundup over the weekend, benefiting the American Cancer Society. Chef Anile along with other members of the esteemed North Carolina Pork Council, served their version of delectable pig creations during the “Pork Promenade”. The diamonds and denim crowd were a little squeamish at their first pass by the suckling pigs on display, but after tasting the pork paired with pomegranate pico and roasted vegetable guacamole in a crunchy corn shell, they were hooked! A long line quickly formed to get one of Anile’s scrumptious pig tacos. Before long, Jim had served everything but the squeal, and there were some very disappointed cowboys and cowgirls.
