These late few weeks of winter have seemed to slow the local produce down a bit. I keep trying to change a few more items on the menu for spring, but have not been able to get much out of local markets. I know that all this rain we have had, should make produce really good once things get rolling. Right now it seems hard to find even radishes and thats not normal for this time of year. Got lots of baby squash with the flowers for risotto this week. Easter brunch is coming fast and I myself am looking forward to the chicken and waffles ( Not on the new training diet) but its my Easter goal/reward. The guys in the kitchen are all trying to shed the 20 opening pounds we put on……… Spring is upon us!Â
